Degustation:.yellow colour with golden tints. Fruity, ripe aroma. Body with a full structureand a warmth typical of Sicilian white wines.
工藝:卡塔拉托在九月中旬采摘,而莎當妮在八月初就已經(jīng)采摘了。這款經(jīng)典的干白采用兩種釀造工藝,在冷卻葡萄的同時就把葡萄壓碎了,是一種較溫和的擠壓方式,冷處理后,恒溫控制。一部分莎當妮放在木桶里發(fā)酵,而剩下的莎當妮和卡塔拉托一起放進不銹鋼通發(fā)酵。
Vinification: the grapes ripen at different times: mid-September for the catarratto, the beginning of Augustfor the chardonnay. The classic white wine vinification method is used for both, with cooling of the grapes assoon as they have been crushed, a gentle pressing, cold settling and temperature-controlled fermentation. A part of the chardonnay spends a period in woods while the remaining part, together with the catarratto, is kepy in stainless steel containers.
